I've nicknamed this recipe "Fake Tamale Pie"

1 pound hamburger
1 cup chopped onion
2 roma tomatoes, finely chopped
1/4 cup taco seasoning
3/4 cup water
garlic salt, to taste
onion powder, to taste
1 small can enchilada sauce
2 cans black beans
1/2 of a 1 pound bag of tortilla chips
2 cups grated cheese

Preheat oven to 350 degrees.

In a large skillet cook hamburger, add garlic salt and onion powder. When hamburger is browned, drain; add onions, saute until glassy. Add taco seasoning and water, simmer on high until thickened. Add tomatoes, black beans (undrained), and enchilada sauce. Simmer for about 5 minutes. Taste occasionally (don't over salt as dish will gain salt from the tortilla chips) add more garlic and/or onion powder as desired.

Reserve 1-2 handfuls of chips for top of casserole. Coarse crush the remainder of the chips and spread evenly in the bottom of a 9 X 13 baking dish. Carefully pour hamburger mixture over the crushed chips, spread evenly. Bake for 20 minutes until mixture is bubbly. Add reserved chips to the top, spread out evenly, and liberally spread grated cheese over chips. Return to oven 2-3 minutes to melt cheese. Serve with extra grated cheese if desired.


The chips on the bottom turn into this tasty cornmeal mush. My family thought it was a recipe good enough to write down. Hope you enjoy.

And for the genuine Chalain touch, before putting meat on chips in casserole, add six drops Dave's Ultimate Insanity sauce and stir.
