The supper I just made, thanks to the idea of my wife:

1/2 medum onion minced or finly diced
1-2 cloves garlic (2 if they're small) smashed or otherwise finely minced
3 tbsp butter
3 frozen chicken breasts, thawed & cubed
7/10 pound fresh mushrooms, sliced
salt & black pepper to taste
~1 tsp dried parsley
1 small jar (26 oz) pasta sauce
1 box + (1 lb) penne pasta

In a large saute pan put in 2 tbsp butter, onion, and garilc. Cook until onions are clear and garlic starts smelling roasted (add some salt at this point)

Add chicken to the pan, along with salt, pepper, and parsley. Cook until chicken is cooked through.

Add the remaining butter and melt, then add the mushrooms, cook until the mushrooms have cooked (should reduce by about half) remove from heat.

While this is going on, cook pasta according to box instructions.

To a large pot, dump in chicken mix, and pasta sauce, simmer on low heat until flavors start to meld.

Add drained and cooked pasta to the pot and stir until well coated. Plate and top with parmasion (sp?) cheese.


Serves on the order of 4-6 depending on appetite.


This recepie is very much 'in development' we need more different italian spices to add before the sauce, we think that white wine sauce might have been better, BUT it made a wonderful "Lets see what these ingredients taste like" supper. Very filling.
