Post subject:  Twice-Twice-Cooked Bagels

So, bagels are a twice-cooked food, right? They're boiled, then baked.

Today I made Twice-twice cooked bagels, by adding "fried and then broiled" to the list. They were delicious:

Put 2 TBSP light olive oil in a skillet with some garlic. Fry lightly, then drop a bagel open-faced into the oil. The idea is to lightly brown the faces of the bagel in garlic oil.

When browned, remove from heat, then spoon some spaghetti sauce onto the bagel. Sprinkle mozzarella cheese over the top and slide it under the broiler. Toast until the cheese is browned and bubbly.

VERY tasty. The frying gives it a pizza-crust texture and prevents the sauce from soggifying the bagel.
