So I watched the Good Eats episode "Zen and the Art of Omelette Maintenance" (transcript here) and I decided this morning to try the technique he demonstrated.

My omelette skill has gone from "pretty good" to "OMFG *NROM*" absolutely instantly.

Horribly good technique.

I haven't yet gotten the chance to try this with an omelette yet (though I have it planned for Mothers Day) but I tried this technique with scrambled eggs and they showed a marked improvement.
